How to Store Ghee So It Stays Fresh for 12 Months

<h2>Ghee does not need the fridge</h2><p>Pure cow ghee is naturally low in moisture and high in saturated fat — both of which keep bacteria away. Stored correctly, it stays good for 9–12 months at room temperature.</p>
<h2>Three rules</h2><ol><li><strong>Glass, not plastic.</strong> Plastic leaches over time. Glass is inert.</li><li><strong>Dry spoon, every time.</strong> Even one drop of water can introduce mould.</li><li><strong>Cool, dark shelf.</strong> Avoid the stove-top corner — heat oxidises ghee.</li></ol>
<h2>Signs of spoilage</h2><p>Real ghee that has gone bad will smell sour or "off". Mild crystallisation, white spots on top in winter, or graininess are normal and harmless.</p>
